FRESH PEACH SALSA RECIPE

This month, we have had a focus on healthy eating.

“Peaches and tomatoes are in season right now, so what do I make? Fresh peach salsa! This recipe is easy to throw together for a quick, yummy snack.”

Fresh Peach Salsa Recipe
Recipe by Dr. Michelle Jorgensen
Course: Snack / Cuisine: Mexican
Ingredients

1 lb tomatoes

1 bell pepper
-
1 jalapeño, seeded

1 onion

3 peaches
-
1/2 bunch cilantro, chopped

2 tbsp lime juice

1 1/2 tsp salt, or to taste
Instructions

Finely chop tomatoes, bell pepper, jalapeño, onion, and put them in a large bowl.

Dice the peaches with their peels on and add them to the bowl.

Add chopped cilantro, lime juice, and salt. Mix together and taste. Add more salt or lime, if needed. Enjoy!
Notes
NOTE: Store in an airtight container in the refrigerator.
