Whole Crockpot Chicken, Gravy, and Bone Broth

Crockpot Chicken

My family loves this whole crockpot chicken!

It is a tradition in my family! Growing up my kids got used to eating this almost every sunday, then we would eat several other things the next few days using the leftover chicken. We made things like shepherds pie, chicken noodle soup, sandwiches, and burritos or tacos.

I love this recipe because I can buy a relatively inexpensive chicken. (I recommend an organic, grass-fed chicken) I spend just a few minutes one morning getting it ready. And then I have chicken for a few meals and some nutritious homemade bone broth!

Go read my blog called “What’s In Your Fridge Right Now?” to learn more about how I make this chicken last and how to use what you have on hand to make delicious, easy, and cheap meals!

I also really love this chicken with some nice oven-baked sweet potato wedges! Check out my recipe for those right here!

I hope you enjoy this recipe!

Ingredients

  • 1 Large Roasting Chicken
  • 2-4 5sp Salt
  • 2 tsp Paprika
  • Dash of Cayenne Pepper
  • 1 tsp Onion Powder
  • 1 tsp Thyme
  • 1 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 Cup Water
  • 3 Tbsp Cornstarch
  • 1/4 Cup Water
  • 1 tsp Apple Cider Vinegar

Directions

  1. In a small bowl, combine the spices: salt, paprika, cayenne pepper, onion powder, thyme, pepper, and garlic powder.
  2. In a separate bowl, remove any giblets from chicken and clean chicken.
  3. Using a soup spoon, lift up the skin of the chicken and make a space between the skin and the meat. Rub the spice mixture onto the chicken under the skin and outside of the skin - on both the front and the back.
  4. Put the chicken in the crockpot (No liquid is needed, the chicken will make its own juices)
  5. Cook on low 6-8 hours. When finished cooking, the chicken will fall apart because it is so tender.
  6. To make the gravy, strain the juices from the crockpot into a pan and add 1/2 cup water.
  7. Next, in a separate bowl mix together the cornstarch and 1/4 cup water until combined. Then add to the pan to make a gravy.
  8. Whisk over medium heat, until thick.
  9. Season as needed.
  10. Save all the chicken bones and skin as you remove the meat.
  11. Put into a crockpot and cover by at least 3-4 inches with water, add 1 t apple cider vinegar
  12. Cook on low for 20 hours
  13. Strain the bone broth and discard the bones.
  14. Enjoy your homeade chicken broth!
